Guitar Wiring Site - Some good information on switch types and how to use them for some basic pickup wiring schemes.

DGB Studio - A massive library of wiring schemes for all pickup configurations (HH, HSS, HSH, SSS, etc.). I think this site probably has them all!

Alan Ratcliffe - A great site with loads of informative articles. Maybe one day my site could be like this. Check it out!
